Hatched in 2007 from an Airstream trailer-turned-food truck, then enlarged to a small local restaurant chain, the much-lauded Skillet has dramatically reduced its footprint. This month, as the Seattle Times and others reported, Skillet shuttered its eateries on Capitol Hill and at downtown’s Harbor Steps. Next month will see the same fate for the location at Amazon’s Doppler block, in the Denny Triangle.
